Profile:
Les Jardins de Babylone comes from steep Pyrenean foothills where everything feels a little dramatic—the slopes, the light, the patience required to farm here. It’s made from Petit Manseng, a grape that thrives on tension, hanging late into the season, soaking up sun by day and cool mountain air by night. The result is something rich, radiant, and improbably poised. On the palate, it unfolds slowly. Lush waves of quince paste, baked pear, pineapple skin, and citrus oil glide in, wrapped in a silken texture that feels almost decadent. And yet—there’s lift. A vibrant, mouthwatering line of acidity that keeps everything dancing rather than sinking into sweetness. Opulent, yes. Heavy? Never. This is a wine for moments that ask you to pause. Blue cheese at the end of a long meal. Spiced dishes that flirt with heat. Or nothing at all—just a glass, a chair, and the sense that you’re somewhere else entirely. It doesn’t shout. It glows. And once it does, you understand why this vineyard is spoken about with a little awe and a lot of reverence.
