They refer to this climat so positively because while it is set on upon Kimmeridgian marl like Le Cotelin, it is from a North West facing slope a situation that would have been unforeseeable 2 decades ago. The warmer climate crossed with this naturally cooler spot makes for a perfectly balanced expression of organically grown old-vine (50 years) Sauvignon Blanc from fossil rich chalky soils. Expect dynamic citrus zing and gentle herbaceous notes in La Montee de Saint Romble which makes the perfect foil for ceviche or scallop tartare as well as the famed local ‘crottin’ goats cheese from Chavignol.
